Beat the Heat - with a nice, tall Tom Collins!

Tired of the same old G&Ts? The Tom Collins is a classic cocktail that takes gin and citrus one step further. A little more elegant and perfect for pool-side sipping. Or pond-side, in our case.

Tom Collins

per cocktail:
2-3 oz gin
1½ oz mix of fresh lemon and fresh lime juice
½ oz simple syrup, or to taste
Club soda
Lemon slice and maraschino cherry to garnish

Mix all ingredients, except soda water and garnish, in a tall glass with ice, fill with club soda and garnish with cherry and lemon. Repeat as necessary.


Bartender Tips
  • Keep your mixers on ice (or in the bar fridge) so they don't melt the cubes.
  • Make up a batch of freshly squeezed lemon and lime juice and store it in the fridge just before your guests arrive.
  • Simple syrup - 1 cup sugar, 1 cup water, heat until dissolved. Store in a tightly sealed jar in the fridge.
